Ever since I came back from Montreal, I have been dreaming of these maple lollipops that I had while skiing! I finally decided to give it a go and am quite happy with the results. The trick is good maple syrup and a candy thermometer.

Heat the maple syrup in a small pan on the stove until the internal temperature reaches 240 degrees F and then pour onto the ice and plop on a Popsicle stick. Wait about 45 seconds and then you can roll it up and enjoy!
